Definition: These small, tapered, conical peppers are generally marketed when yellow, though if allowed to mature longer, they turn orange or red. Santa Fe Grandes have a slightly sweet taste and are medium-hot to hot in spiciness. They may be used in both cooked and raw dishes. See also chile.
