Teleme cheese
Definition:
[TEHL-uh-may] Available mainly in northern California, Teleme cheese is similar in texture to domestic brie. It contains about 50 percent milk fat and has a pronounced tangy flavor. When young, Teleme's texture is soft and creamy. As it ages, it becomes runnier and stronger in flavor. See also cheese.
